Bag, bulk or box: what cold storage buyers now ask for
Almost every Indian potato store is bag-type. The buyers who pay the most are the ones who no longer accept it.
The short answer
- Bag storage stacks sacks floor to ceiling. It is cheap and it is what most Indian potato stores do, and it produces uneven temperature and humidity between the top and bottom of a stack.
- For table potato that unevenness is tolerable. For processing-grade supply it is not — dry matter, sugar and uniformity all move with it.
- Bulk and box hold condition far more evenly, which is why they are the European and Russian norm.
- The question for an owner is not whether the shift is coming, but whether his particular buyers are the ones who will force it.

02Why processors care
A chip or fry line does not reject a consignment because it dislikes the storage method. It rejects it because the potato does not run — colour is wrong, sugars are wrong, sizing is uneven.
Those outcomes track storage conditions closely, and conditions vary far more across a bag stack than across a bulk pile or a box stack. A store that cannot hold a consistent condition cannot serve the customer who pays the most.
03What an owner should work out before converting anything
- Who your buyers will be in three years, and whether any of them are processors.
- Whether your chamber layout and floor can take bulk loading at all, which is a civil question rather than a refrigeration one.
- Handling: box storage needs forklifts, box stock and space to turn, and those costs are easy to underestimate.
- Whether a partial conversion makes sense — one chamber to box, the rest left in bags, so you can serve both markets while you find out.
